Pork Barrel BBQ – 102 out of 9,163 in 2011 KCBS Overall Standings!!

2011 was an amazing year for the Pork Barrel BBQ competition BBQ team. We experienced a lot of first in 2011:

- First Reserve Grand Championship – Middletown BBQ Cook Off
- First Catagory First Place Call (Chicken) – Beltway BBQ Showdown
- First Grand Championship – Safeway National Capital Barbecue Battle
- First Perdue National Chicken Championship – Safeway National Capital Barbecue Battle
- First Kingsford Points Chase Win – Safeway National Capital Barbecue Battle
- First Invitation to Cook in the American Royal Invitational
- First Call at the American Royal Invititional – 9th Place Brisket
- First Call at the American Royal Open – 6th Place Chicken
- First Invitation to Cook in the Jack Daniel’s World Invitational Barbecue Contest

After cooking 18 contests in 2011, including Memphis in May, the American Royal and The Jack we finished with the following rankings in the 2011 KCBS Team of the Year race:

Overal – 102nd out of 9,163 teams
Chicken – 46th out of 9.163 teams
Ribs – 186th out of 9,163 teams
Pork – 112th out of 9,163 teams
Brisket – 137th out of 9,163 teams

We can’t wait to get the 2012 season kicked off! Out 2012 goal is to finish in the top 75 teams in each of the four catagories and top 50 overall!! We’ll see you on the BBQ trail in 2012!!

Pork Barrel BBQ Competes with Barbecue’s Best at 32nd Annual American Royal

Last weekend, Pork Barrel BBQ’sCompetition BBQ Team headed to Kansas City, Missouri to cook against hundreds of the nations top barbecue pitmasters at the 32nd Annual American Royal Barbecue. Known throughout the world of barbecue as the World Series of Barbecue, the American Royal was first held in 1980 and has grown from humble beginnings into the largest barbecue conteston the planet. There are two contests held during the American Royal. The Invitational, held on Saturday, is an invite only contest made up of teams that have won at least one Grand Championship in the past year. The Open, held on Sunday, is open to anyone wishing to participate and usually attracts upwards of 500 teams.

This marked Pork Barrel BBQ’s second time competing in the American Royal Open and our first time competing in the American Royal Invitational. We earned our invitation to the 32ndannual American Royal Invitational contest by winning the Grand Championship at the 2011 Safeway National Capital Barbecue Battle in Washington, DC, the nation’s largest barbecue festival.

In Saturday’s American Royal Invitationalwe were ecstatic to finish 26th out of 142 of the best teams in the world of competition BBQ!

Pork Barrel BBQ Takes 10th Place in Brisket in the 32nd Annual American Royal Barbecue Invitational Contest

Our finishes in each of the categories were:

Chicken – 41st
Ribs- 60th
Pork- 70th
Brisket- 10th

In Sunday’s American Royal Open we continued our strong weekend by finishing 40th out of 483 teams! Finishing in the top 10% of such a large and accomplished number of teams was a thrill for us!

Pork Barrel BBQ Takes Sixth Place in Chicken at the 32nd Annual American Royal Barbecue Open Contest

Our finishes in each of the categories were:

Chicken- 6th
Ribs- 120th
Pork- 128th
Brisket- 159th

On top of this, Pork Barrel BBQ got it’s first perfect 180 score in the Dessert category in the American Royal Open Dessert contest thanks to the amazing mixed berry cheesecake cooked by Heath’s parent’s Rex & Barbara!!!

It was a huge thrill for us to cook in our home state of Missouri and in one of the BBQ hot spots of America! Beyond the success we had on the smoker, it was an amazing chance for us to hang out with some of our BBQ heroes, mentors andfriends as well as catch up with friends and family who live it Missouri (Thanks for all your help Joe andBob!!). It is always special when we get to hang out with great pitmasters and friends like Rod Gray of Pellet Envy, Pat Burke of Tower Rock, Mike Mills of 17th Street Bar & Grill, Dave Raymond (AKA Sweet Baby Ray) BBQ Sauce God and founder of Sweet Baby Ray’s, Neil Strawder of Bigmista’s BBQ, Danielle Dimovski of Diva Q, Tuffy Stone of Cool Smoke, Paul Huff of GoneHoggin.com, George Shore of Pitmaker and so many more!!!!

In addition to the main competitions Heath cooked in the Kansas City Barbecue Society’s Grillmaster’s Series against Danielle Dimovski of Diva Q. The battle between the U.S. and Canada was held on the stage of the KCBS Great American BBQ Tour led by Mike and Chris Peters. Last year Pork Barrel came out on top against one of the legends of BBQ, Johnny Trigg. Heath made it back to back wins at the Royal by gaining the stomach’s of the judges in his Steak Battle against Diva Q!

Memphis In May Scrapbook Entry #1 – BBQ Hints from TLC BBQ Pitmaster and Memphis in May BBQ World Champion Tuffy Stone of Cool Smoke & Q Barbeque

This is the first in a series of blog posts on our adventures at the 2010 Memphis in May World Barbecue Championships. Over the course of 4 days we racked up 4 top 15 finishes (we even managed to place 4th in the World Championship’s beef catagory with our brisket) and several hours of amazing videos from some of the most interesting and influential folks in BBQ. We thought we’d kick off our series with a bang – our first entry into our 2010 Memphis in May scrapbook is an interview with TLC BBQ Pitmaster and down right nice guy Tuffy Stone of Cool Smoke and Q Barbeque fame.

Over the course of the past year we’ve had the chance to get to know some of the great legends of BBQ, including guys like Pat Burke and Mike Mills – the founders of the Legends of BBQ Club. Tuffy, a friend and fellow Virginian, is a guy who has made a name for himself and risen to “Legend” status in short order. Tuffy is pitmaster of the Cool Smoke competition BBQ team and owner of Q Barbeque (two locations in Midlothian, VA and Hampton, VA). If the name Tuffy Stone is ringing a bell in your head but you just can’t quite place where you’ve heard it before it is probably because you saw him on TLC’s hit show BBQ Pitmasters.

For a guy with celebrity status and the ability to make anything placed on a smoker taste like a five star meal you might think he’d be working in the distance and shadows of his Jambo Pit built by legendary smoker builder and artisan Jamie Geer (Tuffy’s pit looks more like a cherry red Corvette than a smoker – it performs more like one too!), but he isn’t. Tuffy is as approachable as they come and loves to talk BBQ with fellow competitors, customers and fans.

The best part of the Competition BBQ circuit isn’t the great barbecue found around every corner, it is the chance to meet and become friends with some of the best folk around – like Tuffy. BBQ teams from around the country compete in contests sanctioned by a number of barbecue societies including KCBS, MIM, and MBN. These teams use everything from Weber Grills to Jambo Pits to homemade smokers to compete for prizes and tropies in catagories like chicken, beef brisket, pork shoulder, pork ribs, and whole hog.  If you love to grill find a contest near your home and sign up – you’ll have a blast and meet some great folks!

Great KCBS Blog Update On Their Great American BBQ Tour Stop At Memphis In May

2010 Great American BBQ Tour Stop #5 – Memphis in May

Tunisia is the northernmost country in Africa and was the inspiration for the month-long 2010 Memphis in May festival. As Chris and I loaded into Tom Lee Park in Memphis, you could see the Mediterranean influence with some of the two and three story scaffold structures towering above the over 200 BBQ teams cooking pork shoulder, pork ribs and whole hogs for over $100,000 in prize money.

The Memphis downtown area is convenient to navigate with trolleys, shuttles, and horse drawn carriages, and even had a van that was decorated as a pig pulling two smaller piggies through the streets. Upon closer examination of the pigs, it was not promoting the BBQ event but a local strip club. Since we were staying in a hotel downtown about a mile and a half from the park, Chris and I decided it would be nice to walk to the event. We forgot that the event is a mile long and the trailer location was smack dab in the middle so we ended up with a two mile walk on Thursday morning. The morning walk wasn’t too bad but after thirteen hours on our feet, the two mile walk back to the hotel that first evening felt much longer.

Don with Big Bob Gibson stopped by early in the week and invited Chris and I for pie Friday night. Since we stopped by the restaurant in Decatur last year, Chris has been “jonesing” for more of their fabulous pies so we fought the crowds and hit the Big Bob Gibson party hoping that Don would remember inviting us. Chris had the coconut cream and I had the peanut butter pie while visiting with Amy Mills of “Peace, Love and Barbecue” fame. It was neat to look in the back of the booth and see the legend Mike Mills visiting with Chris Lilly. I could only imagine the conversation that these two BBQ powerhouses were having.

Even though we were in not so familiar territory, we had plenty of KCBS representation around including Chris with the “Let’s All Get Drunk and Que” team that had a booth right across from the trailer. Clint with “Smoke in Da Eye” BBQ stopped by with his media badge and the KCBS team “Ribbed For Your Pleasure” was right behind the trailer. Heath and Brett with “Pork Barrel BBQ” of ABC’s Shark Tank fame competed and stopped by the trailer to say hello. I invited Heath back to compete in Saturday’s GrillMaster contest. Since they are opening a restaurant in the DC area, I wanted to test his prowess and he didn’t disappoint with his lettuce-wrapped chicken tacos with a side of Master of Mixes mini-Bloody Mary’s.  Famous Dave Anderson even stopped by after judging and spent some time visiting.

On Thursday, we kept seeing people walking by wearing good-looking Kingsford polos and found out later that Kingsford had meetings with some of their leadership team the week of the BBQ contest in addition to being one of the main sponsors. Chris was wearing a Kingsford T-shirt and as we were on the long walk back to the hotel, we ran into more Kingsford folks who were so excited to see her representing Kingsford that they pulled out a free charcoal coupon and gave it to her. As excited as they were, we didn’t have the heart to tell them that we promote Kingsford on the BBQ tour.

We were told that it wouldn’t be Memphis in May unless there was rain and this year was no exception as the skies opened up on Friday afternoon. Since some of the MMA Creative folks came down to help us man the sampling tent, the trailer was full of people so Chris broke out the cards for a marathon game of “Go Fish”.

Since we were close to the awards stage, you could hear the whoops and hollers going on Saturday evening as awards were handed out. The weatherman was calling for more rain so we were busy packing things away and missed Tuffy getting the call as Memphis in May World Champion in the shoulder category.  We had a wonderful time in Memphis and appreciated all the southern hospitality that we were shown.

BBQ 101 – 10 Important Facts about Grilling – Chef Paul Kirk

In a recent issue of the KCBS Bullsheet Chef Paul Kirk contributed a great article titled “10 Important Facts about Grilling The 10 Important Facts for B.B.Q.” We thought we’d share that article with you.

1. BE ORGANIZED. Have everything you need for grilling on hand and at grill side before you start grilling.

2. GAUGE YOUR FUEL. There’s nothing worse than running out of charcoal or gas in the middle of grilling. When using charcoal, light enough to form a bed of glowing coals 3 inches larger on all sides than the surface area of the food you’re planning to cook. (A 22 1/2 inch grill needs one chimney’s worth of coals). When cooking on a gas grill, make sure the tank is at least one-third full.

3. PREHEAT THE GRILL TO THE RIGHT TEMPERATURE. Rember: Grilling is a high-heat cooking method. In order to achieve the seared crust, charcoal flavor, and handsome grill marks associated with masterpiece grill man ship, you must cook over a high heat. How high? At least 500 degrees F. Although it is worth repeating: When using charcoal, let it burn until it is covered with a thin coat of gray ash. Hold your hand about 6 inches above the grate. After 3 seconds, the force of the heat should force you to snatch your hand away. When using a gas grill, preheat to high (at least 500 degrees F); this takes 10 to 15 minutes. When indirect grilling, preheat the grill to 350 degrees.

4. KEEP IT CLEAN. There’s nothing less appetizing than grilling on dirty old burnt bits of food stuck to the grate. Besides, the food will stick to a dirty grate. Clean the grate twice: once after you’ve preheated the grill and again when you’ve finished cooking. The first cleaning will remove any bits of food you may have missed after your last grilling session. Use the edge of a metal spatula to scrape off large bits of food, a stiff wire brush to finish scrubbing the grate.

5. KEEP IT LUBRICATED. Oil the grate just before placing the food on top, if necessary (some foods don’t require that the grates be oiled). Spray it with oil (away from the flames), use a folded paper towel soaked in oil, or rub it with a piece of fatty bacon, beef fat, or chicken skin.

6. TURN, DON’T STAB. The proper way to turn meat on a grill is with tongs or a spatula. Never stab the meat with a carving fork – unless you want to drain the flavor-rich juices ont0 the coals.

7. KNOW WHEN TO BASTE. Oil-and-vinegar-, citrus-, and yogurt- based bastes and marinades can be brushed on the meat throughout the cooking time. (If you baste with a marinade that you used for raw meat or seafood, do not apply it without first bringing it to a boil.) When using a sugar-based barbecue sauce, apply it toward the end of the cooking time. The sugar in these sauces burns easily and should not be exposed to prolonged heat.

8. KEEP IT COVERED. When cooking larger cuts of meat and poultry, such as a whole chicken, leg of lamb, or prime rib, use the indirect method of grilling or barbecuing. Keep the grill tightly covered and resist the temptation to peek. Every time you lift the lid, you add 5 to 10 minutes to the cooking time.

9. GIVE IT A REST. Beef, steak, chicken – almost anything you grill-will taste better if you let it stand on the cutting board for a few minutes before serving. This allows the meat juices, which have been driven to the center of a roast or steak by the searing heat, to return to the surface. The result is a juicier, tastier piece of meat.

10. NEVER DESERT YOUR POST. Grilling is an easy cooking method, but it demands constant attention. Once you put something on the grill (especially when using the direct method), stay with it until it’s cooked. This is not the time to answer the phone, make the salad dressing, or mix up a batch of your famous mojitos. Above all, have fun. Remember that grilling isn’t brain surgery. And that’s the gospel!

The Pork Barrel BBQ Competition BBQ Team is pleased to announce that Pork in the Park in Salisbury, MD will be our first contest of the 2010 season.

Pork in the Parkis sure to be a great time with over 100 competition teams expected to participate April 16-17 at Winterplace Park in Salisbury, MD.  Pork in the Park is the largest KCBS event on the East Coast and will see some of the best teams in the nation compete.  If you’re in the neighborhood stop by the Pork Barrel BBQ site and say hi.  While there you’ll also be able to visit Cool Smoke of TLC’s BBQ Pitmasters Fame.  It should be a great time for the whole family!!!

Pork Barrel BBQ Wins Big at the Safeway National Capital BBQ Battle

We are proud to report that our mission of bringing championship BBQ into the backyards of all Americans took a big leap forward this weekend! We entered our first ever BBQ competition, and decided to try out our rub and recipes against some of the biggest and best BBQ’ers in the nation at the Safeway National Capital BBQ Battle – out of over 50 teams, we took 2nd place in the Best BBQ Sauce in the Nation competition and 4th Place for our Pork Shoulder covered in our All American Spice Rub:
